I tend not to pick favorites because I have to many, but some representative ones are these: Brotherhood of the Wolf, Pirates of the Caribbean, The Twilight Samurai, Monty Python and the Holy Grail, Sleepy Hollow, The General, Lord of the Rings, The Quiet Man

This is a tough one. I have a special fondness for film scores. There's The Thin Red Line, Brotherhood of the Wolf, Sommersby, The Village, Edward Scissorhands, The Ninth Gate, Lord of the Rings.

Yes, though I haven't had the chance to see many of his films.
